Quick and Easy Pasta with Sausage and Veggies


As the hustle and bustle of the new school year is upon us quick easy meals are a necessity. Let’s be real, most of us are looking for quick easy healthy meals even if we don’t have kids that are heading back to school this time of year. Pasta is a staple in many households however, knowing that simple carbs are not necessarily popular these days, here’s a way to make a pasta meal a little healthier and still quick. I start by sautéing some vegetables in avocado oil. Today I used kale but you can get adventurous here. I know, I know, adventure and vegetables don’t really stir up a lot of excitement but humor me! I often use zucchini, spinach or broccoli. I defrost a frozen sausage or brat (nitrite/nitrate free and preferably organic) slice it up and sauté with the vegetables. Next add some prepared marinara sauce to the veggie and sausage mixture. Then I add cooked pasta. I prefer gluten free and in this meal I used a paleo gluten free gnocchi. This will surely fill me up for the afternoon while I finish organizing school supplies, backpacks and cleaning the craziness that summer brought about the house. Let me tell you, the number of ponytail holders and lego pieces that I’ve found in every room of the house is astounding!
